Soy sauce is one of the most important seasoning that indispensable for all the family among Chinese dishes. But did you know if the soy sauce you ate is healthy for your body? Or how to choose a good soy sauce. Today, let’s take you to find out what is a good soy sauce should like.

Among the market soy sauce has generally divided into three kind, pure brewing method (pure brewed soy sauce), quick brewing method (chemical soy sauce) and mixed method, three kinds. Traditional brewing as known as pure brewed soy sauce, the step is adding the natural bacteria into the raw bean and let the protein decompose naturally and become a good amino acid. The decomposition take at least 180 days to complete, and a very time-consuming. The soy sauce taste thick and delicious, but also price are higher. The quick brewing method (chemical soy sauce) is using the hydrochloric acid to decompose under high pressure. During process, the heat will produce harmful carcinogens, such as: Acetylpropionic acid and Monochloro propylene glycol, very bad for body. The mixed method is combine two method above, mix both pure brewed and quick brewed in different proportions. The fragrance won’t be good as pure brewed, and still contain chemical ingredients. It is not good for health if you take too much of them.

To choose a good soy sauce there is several point need to be pay attention. First, try to choose the brand name soy source, and read label carefully to see if it have 100% pure brewed logo on it. To avoid buying the soy source that have arterial or chemical terms from the label. On the other hand, a good soy sauce can be identify from the appearance and favor. Pure brewed soy sauce color in transparent dark red, and come with natural bean smell. The taste is mellow and refreshing. The color of chemical soy sauce is darker and smell pungent. Although soy sauce is healthier compare to other seasoning, but too many sodium still not good for the body, people should take it with moderately.
